There’s something about Easter brunch that just feels… hopeful. Maybe it’s the sunshine finally sticking around, maybe it’s the pastel colours, or maybe it’s the fact that we get to gather around a table loaded with delicious food and call it a holiday tradition. Whatever the reason, Easter brunch is one of my favourite excuses to slow down, pour a second cup of coffee, and put out a spread that makes people smile the second they walk through the door.

And here’s the thing — brunch doesn’t have to be complicated to feel special. In fact, some of the most beautiful Easter tables are built around simple, thoughtful bites that look impressive but are secretly very easy to pull together. That’s exactly where a brunch board comes in.

Devilled Eggs: The Ultimate Brunch Classic (With a Twist)

Devilled eggs are one of those foods that disappear faster than you expect. You set down the tray, turn around to refill coffee, and suddenly there are only two left — and someone is politely pretending they’re not about to take both.

They’re classic for a reason. Creamy, flavourful, and easy to make ahead, they’re perfect for entertaining — especially at Easter.

Below are three delicious variations to mix things up this year. Each one brings a different personality to the table: warm and spiced, sweet and smoky, and elegant and savoury.


Curried Devilled Eggs

If you want something just a little unexpected (in the best way), this is the one to try. The curry powder adds a gentle warmth and depth of flavour that makes people pause after the first bite and say, “Wait… what’s in these?”

Ingredients

  • 6 large hard-boiled eggs, shelled
  • 1/4 cup mayonnaise
  • 1 tablespoon minced green onion
  • 3/4 teaspoon curry powder
  • 1 tablespoon minced fresh parsley
  • Niçois olives (optional)
  • Salt and pepper, to taste

Preparation

Cut the hard-boiled eggs lengthwise in half and gently scoop the yolks into a medium bowl. Mash the yolks with a fork until smooth.

Add the mayonnaise, green onion, and curry powder. Mix well and season with salt and pepper to taste.

Spoon the filling back into the egg whites, mounding slightly. Arrange on a platter and sprinkle with fresh parsley.

These can be prepared up to 8 hours ahead, which makes them perfect for busy holiday mornings.


Devilled Eggs with Candied Bacon

Sweet, salty, smoky — this version is a guaranteed favourite. The candied bacon adds just the right amount of crunch and a little touch of indulgence that feels very brunch-appropriate.

Ingredients

For the Candied Bacon

  • 1 1/2 tablespoons light brown sugar
  • Pinch cayenne pepper
  • Pinch ground cinnamon
  • 1/8 pound thick-cut bacon (about 3 strips)

For the Eggs

  • 8 large eggs
  • 1/4 to 1/2 cup mayonnaise
  • 2 teaspoons whole grain mustard
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 2 scallions, minced
  • 1/2 teaspoon kosher salt
  • Paprika, for garnish

Directions

Preheat the oven to 350°F.

In a small bowl, mix together the brown sugar, cayenne, and cinnamon. Place the bacon on a wire rack set over a baking sheet and sprinkle each slice with the spiced sugar.

Bake for about 10 minutes, flip the bacon, sprinkle with the remaining sugar mixture, and bake for another 10 minutes until crispy. Let cool, then mince the bacon, reserving a small portion for garnish.

Place the eggs in a saucepan and cover with cold water. Bring to a boil, remove from heat, cover, and let stand for 12 minutes. Drain and rinse with cold water.

In a mixing bowl, combine the mayonnaise, mustard, dill, cider vinegar, Worcestershire sauce, scallions, and minced bacon. Season with salt.

Slice the eggs in half lengthwise and remove the yolks. Mash the yolks into the mixture until smooth.

Transfer the filling to a resealable bag, snip off one corner, and pipe into the egg whites.

Sprinkle with paprika, extra bacon bits, and dill before serving.

Devilled Eggs with Smoked Salmon

This one feels a little fancy — in the best way. It’s perfect if you want to add an elegant touch to your Easter table without adding extra work.

Creamy, savoury, and packed with flavour, these are always a hit at brunch gatherings.

Ingredients

  • 8 extra-large eggs
  • 1/2 cup sour cream
  • 2 ounces cream cheese (about 1/4 cup)
  • 2 tablespoons mayonnaise
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons minced fresh chives (you can also add or substitute dill, parsley and/or capers)
  • 4 ounces smoked salmon (about 1/2 cup, minced)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Optional garnishes:

  • Extra smoked salmon
  • Chopped chives
  • Dill
  • Parsley
  • Capers

Directions

Place the eggs in a pot large enough to hold them in a single layer. Cover with cold water and bring to a full boil.

Turn off the heat, cover, and let stand for 15 minutes. Drain and cool in cold water.

Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and arrange the whites on a serving platter.

In a mixing bowl, combine the egg yolks, sour cream, cream cheese, mayonnaise, lemon juice, chives, smoked salmon, salt, and pepper. Beat until fluffy.

Spoon the mixture into the egg whites and refrigerate for about 30 minutes to allow the flavours to blend.

Garnish just before serving.
